Years ago, David supplied me with the same green beans he used for his own roasts. Since, I’ve sought to duplicate his results, exploring countless techniques, equipment, and coffee varietals. I’ve learned how origins, harvesting, processing methods, and roasting techniques affect the character of coffee. Most of all, I’ve learned that this is a journey to a goal that is always one step further from where I am.
Coffee is akin to a perfect vacation sunrise. It is a gift. A moment where our senses travel to uncharted and exotic territories—satisfying the yearn to explore, to savor each new day.
